The SOB Boys love Old Tomorrow Track 85 Lagered Ale beer, but we also love BBQ. So we slapped our two favorites together and created a mouthwatering meaty meal. Always a crowd pleaser (as we have never had a complaint) our BBQ ribs are fall off the bone melt in your mouth goodness! Our recipe is so simple; it will make your guests think you’re a BBQ genius!
WHAT YOU NEED
6 racks of pork back ribs
5-6 cloves of garlic (diced)
1 sweet onion
Cajun Spice
1-2 bottles BBQ sauce*
3-4 cans of Track 85 Lagered Ale **
*Pick your favorite…. our secret sauce we love to use is Rufus Teague Touch of Heat
** Let’s be honest, we love all Old Tomorrow beers, so feel free to substitute your favorite brand of OT!
DIRECTIONS
- If you are BBQ’ing in the afternoon, start early! We usually start around 10-11am! It’s an excuse to sneak one of the cans of OT in with your breakfast!
- Cut racks of ribs into ½ or 1/3 racks (easier to handle on the grill)
- Slice between each bone about 3-4cm down
- Place all ribs in a deep roast pan
- Heavily coat front and back each rib with Cajun Spice, garlic and BBQ sauce (this is the part you roll up your sleeves and get a little dirty)
- Dice onion and spread over ribs
- Beer time! Crack your OT Beers and fill the roasting pan. We won’t judge you if you happen to sneak a sip or two for yourself.
- Fill rest of roasting pan with water (if necessary) to cover all the ribs. Be careful not to wash the sauce and spice off the ribs.
- Cover with tin foil and cook in oven at 350F for 2 hours.
- After cooking time, turn off oven but leave ribs inside and covered until you are ready to BBQ later in the day. This is key so the meat can absorb the liquid it was cooked in over the next 3-4 hours.
- When its time, set your BBQ to low and slow cook for 15-20min turning and heavily saucing the ribs every couple of minutes. Be careful in handling the ribs and they will be tender.
- Serve with all your favorite fixings and enjoy!!
